People don't seem to want a true hutch anymore. Our perception is that customers are looking for flexible functionality, that is combining uses such as storing/displaying china, wine, storing books, and displaying small works of art. We've built a variety of these units, using a variety of woods, mostly with open shelving on top, or perhaps behind glass doors, and storage below behind solid doors.
